((Through popular DM vote on 3/3/13, it was decided that it would be useful to have a list of what students were taking which NEWT courses, in order to facilitate advanced studies. If other DMs think this is a good idea, please give this a sticky! To have your post-OWL(6th or 7th year) character added to the list, please reply in this thread, and a DM will add you. It should be noted that professors require minimum OWL grades to admit students to their NEWT classes - there isn't a complete list, but an E would be necessary in most cases, with an O required by the most picky professors.)) How many of these classes can a student take? Samantha Hathaway would definitely be listed, just not sure what the limits are.

Going from book-canon, 9 would pretty much be the maximum, though mod-lore says that a person can do all of them, if they want. This is entirely my own opinion, but I'd say 5-7 is a good number of NEWT classes. We know that, to become an Auror, you have to pass Potions, DADA, Herbology, Charms and Transfigurations in OWLs, so probably also at least most of them for NEWTs as well.

Also keep in mind that, due to the minimum score requirements, there really isn't a minimum number of classes to take(well, you have to take something, you can't have no classes). If you only got one OWL score high enough to qualify, that's the NEWT course you're taking. Remember Fred and George only got 5 OWLs between them, that's 2 or 3 classes each, possibly even less if some of those OWLs were As. Gaps in the schedule would be filled with remedial OWL courses, I think Crabbe or Goyle were described as taking them in the books. Less studious students, or those who are extremely busy with extracurricular activities, might slack to the bare minimum, and that's okay. It's their future.

Samantha Hathaway (Received Outstandings on all her O.W.L.s and is typically an exemplary student.) N.E.W.T. classes she's interested in or is already signed up for: Astronomy Divination Charms History of Magic Muggle Studies Transfiguration Potions Herbology (Only because she's a Hufflepuff and loves Professor Sprout.) Is NOT interested in and will not sign up for: Arithmancy Ancient Runes Care of Magical Creatures Defense Against the Dark Arts... unless Professor Lockhart is teaching the N.E.W.T. class, in which case she takes it and sits in the front row.
