Could a bake sale work? I was thinking it'd be pretty awesome if each house had to create the most innovative (and slightly magical) pastries and the house that sells the most of their pastries gets points and the money goes to some charitable magical foundation...
but who would buy them? Hm hm hm!
You know what else would be kinda cool? If the teachers assigned (OOCly optional) assignments where your character is to write an essay on what they've learned through their experiences (social or otherwise) at Hogwarts thus far! (Then, of course, making Insanity spellcheck/grade them all day. :>) It might inspire some stuff!
Or a really big holiday party (teacher hosted so Angie and Liss don't make out in a corner the entire time)!

IC assignments can be interesting. That said, I don't think they should be mandatory. I think they should be something that players have the option to pursue if they want, for their own reward from writing IC. Ideas, though... Of course, I still have a class and an entire plot that are on hold until my rl classes stop being so omgawful. Stop giving me ideas, guys!
