Here you go! Please note that this is a sweet dessert bread, not a bread you make sandwiches out of or put in the toaster.
You can eat it warm(from the oven or re-heated in the microwave), room temperature, or chilled...tastes great at any temperature.
Zucchini Bread1 c sugar
1 1⁄2 c zucchini, shredded
1 1⁄2 tsp baking powder
1 tsp baking soda
1 c walnuts optional
1⁄2 tsp salt
1⁄2 c vegetable oil
1 1⁄2 c flour
2 eggs
1 1⁄2 tsp cinnamon
1 c raisins
1 tsp vanilla extract
Beat eggs, oil and sugar. Mix all dry ingredients together then stir into the sugar mix. Add vanilla. Stir in zucchini, raisins and nuts. Pour into a 9 x 5 inch greased and floured pan. Bake at 350 degrees for 50 min. or until the top springs back after lightly depressing it with your finger.
Chocolate Squash BreadFollow the Zucchini Bread recipe with the following changes:
Decrease the flour to 1 1⁄4 c
Add 1/3 c cocoa powder
Use yellow long squash instead of zucchini squash
Optional: changing the vanilla extract to orange extract- same amount
